For a delicious and different twist on a breakfast mainstay, the versatile egg, try this yummy dish. The ingredient list may seem strange, but it’s unique taste is wonderful. This would make a perfect plate for brunch, lunch or a light dinner. I found the original recipe at Kath Eats Real Food, and tweaked it to suit my families taste.
ABC Frittata (Apple, Bacon, Cheddar)
1 slice Turkey Bacon
1/4 large Apple, chopped
2 Eggs
1 tbsp Milk
1/4 cup Shredded Cheddar Cheese
Pinch Sea Salt
Preheat broiler.
Chop and brown bacon. Halfway through bacon cooking, add chopped apple and cook for several minutes until apple softens.
Mix eggs with milk, cheddar and salt. Pour over bacon and apple. Sprinkle a little more cheddar cheese over the top of the egg mixture.
Place frittata under broiler (in safe skillet) for 3-5 minutes, until brown and bubbly.
Makes 1 servings, about 200 calories.
