Summer wouldn’t be the same without one of my favorite foods, potato salad. I can’t imagine a picnic or backyard barbecue without a big bowl of it sitting on the table. There are many different potato salad recipes available and they all have their merits, but this is the one I grew up eating and still love the best.

Mom’s Potato Salad
6 large potatoes, cubed
4 hard-boiled eggs, chopped
1/4 cup dill pickle relish (This is the only thing I do different from my mom's recipe, she liked sweet relish in hers)
1-2 tablespoons dry, minced onion
2 tablespoons prepared mustard
1 cup mayonnaise
salt and pepper to taste

Bring a pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 8 minutes. Drain and rinse immediately with cold water to stop the cooking process.

In a large bowl, combine the potatoes and eggs. In a separate bowl mix mayonnaise, mustard, dill relish, onion, salt and pepper. Add mayonnaise mixture to potatoes and eggs and mix gently. Add just a bit more mayo if the mixture seems to dry.
