This is my husband Joe’s absolute favorite dessert. I seriously have to make two pies when I prepare this, one for him and one for the rest of my family. Seriously. Thank goodness it doesn’t take long to put together, and it really hits the spot when your craving something rich, smooth and creamy. *Warning, this pie is very rich, so just a small piece will do.
Joe’s Peanut Butter Pie
1 cup creamy peanut butter
1 package (8 ounce) softened cream cheese
1 1/4 cups powdered sugar
1/2 teaspoon vanilla
1 package (8 ounce) cool whip, thawed
1 graham cracker crust
In a stand mixer, beat the peanut butter, vanilla and cream cheese until smooth.
Add powdered sugar and beat again until smooth. Add in the thawed Cool Whip and beat mixture some more until smooth, scraping the sides of the bowl as needed.
Spoon filling into crust, evening out the top with a spatula. Chill at least two hours, preferably overnight before serving.
