For a quick and simple side dish, why not try a tasty veggie stir-fry? Its flexible, because you can use your favorite veggies, and healthy, so you can feel good about serving it to your family. It makes a good main course to, all you do is add some meat if you’d like, rice or noodles and it’s ready. Easy Peasy.

Here is the list of ingredients I used, but remember, you can replace them with your choice of favorite veggies.

*Note: If your going to add meat, make sure it’s cut into thin, bite size pieces, and that you cook it first before adding the veggies. It wont take long for the meat to cook since it’s cut thin. Add cooked rice or noodles as a side dish.

Quick and Easy Veggie Stir-Fry

1 Tbs. Light Olive Oil
2 cups cabbage, chopped
1 cup sugar snap peas
1 cup grape tomatoes
For seasonings I used garlic powder, dried minced onion, 1/3 cup homemade chicken broth, mixed with 1 tablespoon. corn starch, and soy sauce to taste.

Heat the oil over medium-high heat. Once the oil is hot add the veggies. I do mine in steps, depending on the type of veggie. For example, cabbage takes a bit longer to cook then say tomatoes, so I add the cabbage first, cook for a few minutes, then add the tomatoes toward the end. You want the veggies to be tender-crisp, not mushy, so watch them closely. Stir the ingredients constantly, but gently so they don’t burn. Once veggies are almost done, add your seasonings and sauce. Good choices are garlic powder, onion powder, dried minced onion, and ginger. For the sauce you can add a few splashes of soy sauce, or really add some depth of flavor by adding some homemade chicken or beef broth, mixed with a little cornstarch, along with the soy sauce. Delicious!
