Lemon Poppy Seed Muffins

I’m always on the look out for simple and easy to make recipes. So when I seen these muffins over on Dan and Meredith’s blog, Haggis and The Herring. I knew I wanted to make them right away. Not only is a yummy muffin and coffee one of my favorite breakfasts, this recipe is incredibly quick and easy to whip up, and uses ingredients I pretty much always have on hand. Plus I have a bottle of poppy seeds that I use for our favorite ham and cheese sliders, and nothing else. So I was excited to find another recipe that I could use them in.

Lemon Poppy Seed Muffins

Allow the batter to rest a few minutes before filling the muffin tins. This will help the tops rise into a nice crown.

Ingredients

  • 2 eggs
  • 2 tablespoons butter, melted
  • 3/4 cup sugar
  • 1/2 cup poppy seeds (I only had 2 tablespoons to add, and they still came out great)
  • 1 cup sour cream or yogurt
  • grated rind and juice of 1 lemon
  • 2 cups flour
  • 1/2 teaspoon baking soda
  • 2 teaspoons baking powder

Directions

  • In a medium size bowl, cream together the eggs, butter and sugar. Stir in the poppy seeds, yogurt, lemon rind and juice and mix well.
  • Place the flour, baking soda and baking powder into a seperate bowl, and blend well with a whisk.
  • Stir the dry ingredients into the creamed mixture, and mix until incorporated. Do not over mix.
  • Pour into a greased or paper cup lined muffin tin, and bake at 425 degrees for 15-20 minutes. A toothpick inserted into the center should come out clean when they are done.
