Although I normally post in Group D’s reveal for the Secret Recipe Club each month, this month I have the pleasure of posting in two reveals! I had the opportunity of making something from Nayna’s blog, Simply Food and jumped for it. Her blog is filled with delicious and exotic vegetarian recipes, something I’m striving to eat more of lately.
Although I’ve been trying to cook a bit healthier since the new year started, I decided to go with something a little sweet when I chose a recipe from Nayna’s blog. Hey, even us healthy eaters like to enjoy a sweet treat once in awhile! : ) After browsing Nayna’s cookie section in her recipe index, I knew I had found my recipe as soon as I laid eyes on it. White Chocolate Cookies. Doesn’t that just sound decadent and yummy? What with sounding so good, I knew they would be delicious as well, and I wasn’t disappointed. These cookies rocked.
Valentine’s day is coming up next month, so I decided to play around with the original recipe a bit, and turn them into a Valentine themed cookie. That’s where the cherries came in. I also swapped out the milk and water for maraschino cherry juice to give them a pink tint, because what says Valentine’s day more then pink and red? I de-veganized them as well by using real eggs because we get farm-fresh eggs from a neighbor, and while I am trying to eat less meat, eggs are still a big part of my diet. These were a fun cookie to make, and were enjoyed by the whole family.
Preheat oven to 325 degrees.
Spread the chopped cherries on a couple of paper towels to drain well. Reserve 4 tablespoons of the juice.
In a large bowl, whisk together the flour, sugar and baking powder. Using a pastry blender or your clean hand, cut the butter into the flour mixture until it is fully incorporated and resembles small crumbs.
In a separate bowl whisk the eggs and vanilla together, then add to the flour mixture and stir to combine.
Add the cherry juice and blend until the dough is an even pink color.
Gently fold in the chips and cherries.
Drop cookie dough by heaping rounded tablespoon unto a silpat or parchment paper lined baking sheet. Flatten slightly.
Bake for 11 - 12 minutes until the centers are set. Allow to cool on the cookie sheet for about 5 minutes, then transfer to a wire rack to cool completely.

I adore maraschino cherries and white chocolate together-what a festive treat! They are so pretty and I can just taste them now-delish!
What a great use for maraschino cherries! I never would have thought to use them in cookies. I bet the white chocolate really sets these over the top!

Can I just say that I adore that you turned these into Valentine’s Day cookies. Seeing them that way, I can’t think of them any other way. And using cherry juice…stroke of brilliance!

This was the first time I have ever paired white chocolate and cherries together Veronica, and it was a yummy combo. To tell you the truth I never really cared for white chocolate, but in these cookies they are delicious!
Oh my goodness Melissa, the combo of white chocolate and cherries is unbelievable. These were such a wonderful change of pace from the usual chocolate chip variety of cookies.

I’m usually a stick-to-the-directions-because-you’ll-just-screw-it-up type of cook and baker. But this year I promised myself to be more adventurous and experiment more in the kitchen. So far it has brought about some really delicious results!
