Almond Cookies

These cookies are melt-in-your-mouth delicious, and would be a wonderful addition to anyone’s holiday cookie tray. A sweet almond glaze tops these delicate almond cookies, and look so pretty when decorated with sliced almonds on top.

12 Weeks of Christmas Sweets~Almond Cookies

Makes about 3 dozen cookies

Ingredients

  • 1 cup butter
  • 3/4 cup sugar
  • 1 teaspoon almond extract
  • 2 cups flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • Glaze
  • 1/2 cup powdered sugar
  • 1 teaspoon almond extract
  • 2 teaspoons water

Directions

  • Combine the butter and sugar in the bowl of a stand mixer and beat until creamy.
  • In a separate bowl, add the flour, baking powder and salt and whisk to combine.
  • Slowly add the flour mixture to the butter and sugar mixture, a third at a time and mix until well blended, scraping the sides of the mixing bowl as needed.
  • Roll dough into small balls, about 1 inch in size and place on a parchment-lined baking sheet. {Make sure the dough balls are small.}
  • Flatten slightly with a small glass dipped in sugar.
  • Bake for 6 minutes (they will not look done) at 400 degrees.
  • Remove from oven and cool on baking sheets for 10 minutes. Remove to a cooling rack to finish cooling completely.
  • Once cookies are cool, mix the glaze ingredients together and stir until blended and smooth. Spoon a very small amount of glaze onto the middle of each cookie. Place sliced almonds on top of glaze and allow glaze to set, about 1 hour.
