This is the second dish I made for Laura’s Freezer Cooking Challenge. I named them “Almost” because my family still isn’t quite sold on the idea that whole wheat is better for you AND taste better. : ) So until that time, I have to make them half whole wheat and half all-purpose flour.
“Almost” Whole Wheat Hamburger Buns
Ingredients
- 2 cups warm Water
- 1 1/2 tablespoons Yeast
- 1/3 cup Honey
- 1/2 tablespoons Salt
- 3 tablespoons Butter, melted
- 3 cups all purpose Flour
- 2 cups Whole Wheat Flour (Or replace the whole wheat and use all white flour. Use 2 1/2 to 3 cups, along with the 3 cups stated above)
Directions
- Mix water, yeast, and honey until yeast and honey are dissolved. Add the salt, butter, and 4-1/2 cups of flour to make a soft dough.
- Beat with a stand mixer for a minute or two (or knead a minute), adding the other 1/2 cup flour as needed to help dough be less sticky (you may not need all of it- and it will still be somewhat sticky). Let it rest 10 minutes.
- Preheat oven to 400 degrees.
- Remove to a floured surface and knead by hand a few times. Press dough flat on floured surface and cut into 18-24 breadsticks (depending on the size you want) and lay out with 1/2-inch between them on a greased baking sheet OR
- Cut into 12-14 even pieces for hamburger (or hot dog) buns and using floured hands, shape each into a ball. Slightly flatten the balls (elongate for hot dogs) and place on a greased cookie sheet.
- Let rise 10 to 15 minutes until almost doubled.
- Bake bread sticks for 10 to 12 minutes until golden. Brush with melted butter and garlic.
- Bake buns for 12 to 15 minutes until golden.
Notes
Freezer Instructions: Place on a cookie sheet and flash freeze. Move buns to a freezer bag and store in the freezer.

Have you tried white whole wheat flour? It is much softer than whole wheat and very similar in taste to using half of each. It still has all of the health benefits of traditional whole wheat flour. A win-win with my family.:)Heather
I've heard of it Heather, but have yet to try it. I live in a small town, which doesn't carry much of what you would consider healthy options. I'll have to check into that next time I make a trip into a bigger city.
