Although I normally post with group D in The Secret Recipe Club, there was a member from Group B who needed someone to pair up with this month, so I was glad to step up and take her blog as my assignment.
The club is a fun monthly challenge I host each month, where each participating blogger is assigned one of the other participating blogs. (Much like a Secret Santa.) No one reveals whose blog they have, they just visit, pick a recipe, and make it. On reveal day everyone posts what they made and the secret is out.
This month my assignment was the delicious blog Fit Mama Real Food, run by the crafty and energetic Heather. Wife to Jacob and mommy to cute as a button Hunter, plus she’s expecting her second little one! What an exciting time for her. Heather’s blog is filled with delicious, good for you food, and I totally got lost in all of her yummy recipes.
What with Fall time fast approaching, I was on the hunt for apple recipes, and found one I did with this recipe for Apple and Potato Hash. Oh my gosh everyone, this stuff is awesome! The combination of buttery flavored honey gold potatoes with sweet golden delicious apples and onions was fabulous. I did swap out the paprika her recipe called for with seasoned salt. But with getting heartburn from the slightest hint of a strong spice, I decided to play it safe and use my favorite seasoning for potatoes. I will definitely be making this on a regular basis. Add 2 tablespoons olive oil to a large skillet and place over medium heat.
Add the potatoes, onion and apple and sprinkle lightly with salt.
Saute for 15 to 20 minutes, stirring occasionally.
Stir in the seasoned salt and pepper to taste.
Continue to cook 5 minutes more, or until the potatoes are crispy on the outside, and tender on the inside.
Remove potato mixture to serving plates and return pan to heat
Add the last tablespoon of oil to the pan and cook the eggs your favorite way.
Place the eggs on your hash and serve immediately.

Apples in hash? Yum, now why didn’t I think of that? This recipe will be a welcome change from my usual tater/onion/poblano pepper version.

I have never made hash, not sure i have eaten it either…. What a twist with the apples.
Looks like something my husband would make for breakfast. LOVE the idea of sneaking an apple in. Not only does it sweeten the dish, but it probably healthens it up, too.
