When I lived in Chicago one of my favorite restaurants to visit was the Outback Steakhouse. Bloomin Onion anyone? I went at least once every two months, but no matter how many times I went I always ordered the same thing, Alice Springs Chicken. Oh my goodness is that dish delicious. What’s not to love though? Chicken smothered in a yummy sweet sauce, along with mushrooms, onions and cheese… divine. So I was super excited when I found this copycat recipe of Outback Steakhouse’s Alice Springs Chicken. I haven’t been to their restaurant since I moved back to Indiana 13 years ago, but I don’t miss it at all now that I can make my favorite dish from there at home.
Alice Springs Chicken
4 boneless skinless chicken breasts
seasoning salt
6 slices bacon, cut in half
1/4 cup mustard
1/3 cup honey
2 tablespoons mayo
1 tablespoon dried onion flakes
1 cup sliced fresh mushrooms (Frozen may be substituted)
2 cups shredded Colby/Jack cheese
Sprinkle and rub the chicken breasts with seasoning salt. Cover and refrigerate for 30 minutes.
Cook bacon in a large skillet until crisp. Reserve bacon grease.
In a small bowl, mix the mustard, honey, mayo and dried onion flakes.
Heat the bacon grease back up in the skillet over medium heat. Place chicken in the skillet and saute for 3 - 4 minutes per side, or until browned. Move chicken to a 9×13 pan.
Apply the honey mustard mixture to each breast, then layer with mushrooms, bacon, and shredded cheese.
Bake in a pre-heated 350 degree oven for 30 minutes, or until cheese is melted and chicken is done.

It was the cheese.. that's what got oily. Next time.. perhaps you could change the cheese.PS.. Headache is GONE. Thank goodness. I have no idea what happened.. but, it honestly felt like something burst way up high. Steve was gonna drag me off to a doctor today.. if it didn't get better! lol
