Shine a Spotlight Saturday #5

Hi party goers! Are you all as frozen as I am? Winter is still hanging on for dear life in my area, with temps back in the negative range again. I’m hoping really, really hard though that Spring will eventually make it’s presence known. I’m already planning out my garden, and have a planting guide set up and ready to go as soon as the weather permits. First up will be cabbage, cauliflower and broccoli, which can handle the ups and downs of Spring temps. Do you plant a garden? If so, what are some of the things you plant during the early growing season?

Cinnamon Bun Mug Cake

Alright all you grain free and gluten free eaters out there. While your coffee is brewing today, grab an extra mug and whip up this super fast and super delicious Cinnamon Bun Mug Cake to enjoy with your coffee. I’m not kidding, it’s that fast. I’m sure you’ve all heard of microwave cakes. Just throw a few ingredients together, cook in the microwave and voila, you have cake. There are a lot of different versions out there, but not many good ones. Most of them tend to be kind of rubbery. The culprit? Putting a whole egg into such a small serving of cake. You wont have that problem with my version though, since it only uses an egg white.

I love that this recipe just makes one serving, because I know how I am with certain sweets. If I know it’s in the refrigerator, I cant leave it alone! I have no willpower, and will keep going back for, one more little bite. Continue reading

Mom, What’s For Supper? Grain-Free Weekly Menu 2/3

We’ll be having more cold weather this week here on the Homestead. The good news though, is that it’s not going to be the severe below 0 temps we’ve been dealing with for the last month. It’s mainly going to be in the 30′s which is a heat wave almost! :) I seen one sign of encouragement a couple of days ago, geese were flying North over our home on Friday!

That means one of two things, either the geese were lost, or Spring will be arriving shortly. I’m hoping really hard that it’s that second option.
