I love oatmeal, but most of my family doesn’t care for it. So I set out to find a recipe for them that they would enjoy. I found it in this recipe. It has healthy oats, along with other ingredients that make it almost taste like an oatmeal cookie. My family loves their sweets, so they were at least willing to try this when I told them it tasted like a peanut butter cookie. Everyone enjoyed it, especially cold, go figure. It makes for a delicious and filling breakfast.
Baked Peanut Butter Oatmeal
Adapted From: Tidy Mom
1-1/2 cups old-fashioned Oats
1/3 cup white or brown sugar
3/4 cup milk
1 egg
1 tsp baking powder
1 tsp vanilla
pinch of salt
1/4 tsp Cinnamon
1/2 cup Peanut Butter
Preheat oven to 350 degrees and spray an 8X8 pan with cooking spray.
Mix all of the ingredients together in a large bowl and stir well. Spread into the prepared pan and bake for 20-25 minutes, or until edges are golden brown.

I tried making homemade pudding with almond milk and it never quite firmed up. Have you noticed any other differences using almond milk in cooking? I do love drinking it though! :)
Candi I'm not sure… I just started using almond milk, so I haven't had time to really experiment with it. It did fine in the baked oatmeal. I'll be trying it out in more foods and will post my results. Thanks for giving me a heads up on using it.
