As I was peeling potatoes for our supper tonight, I looked at the peels that were lying in the sink and thought. Why throw these away, there has to be something I can do with them. That’s when the idea hit me that they would make an excellent potato chip. They were thin and would bake up into crunchy little bites I thought. So after drying them, I tossed them with a little olive oil and salt and baked them. They came out yummy and crispy.

Baked Potato Peel Chips

Peels from potatoes, scrubbed and peeled from the potato thin. A potato peeler does this perfectly.
Drizzle of olive oil and salt to taste

Drizzle a tiny bit of olive oil over potato peels that have been dried well. Toss to coat skins evenly with oil, then lay in a single layer on a baking sheet. Sprinkle lightly with salt, then bake at 400 degrees for 10 to 15 minutes, or till desired crispness. Let cool slightly and enjoy.

  1. That's a good idea for people who peel potatoes. I was trained the lazy way; no one in my family peels potatoes, we just eat them, skin and all. I might have to go to town on a potato with a vegetable peeler though now, just to try making these.
