Mom’s banana pudding, it doesn’t get any better. I wouldn’t think of letting a holiday go by, or any other time really, and not make this old fashioned, creamy dessert. It uses homemade pudding and from scratch vanilla wafers, for a difference you can really taste.
Banana Nilla Pudding
Ingredients
- 1 cup sugar
- 1/2 cup all-purpose flour
- 1/2 teaspoon salt
- 2 cups milk (whole)
- 1 teaspoon vanilla extract
- 1 tablespoon butter
- 4 egg yolks, well beaten
- 4-5 ripe bananas, sliced
- Homemade Vanilla Wafers or store bought
Directions
- For The Pudding
- Combine sugar, flour, and cornstarch in a medium mixing bowl. Mix well, and set aside.
- Pour milk into a large saucepan; cook over medium heat until candy thermometer registers 160 degrees. Slowly add, stirring quickly one-fourth of hot milk into yolks; stir into reserved dry ingredients, and add to remaining hot milk.
- Cook, stirring constantly, until mixture thickens and coats the spoon.
- Remove from heat, and stir in butter and vanilla.
- Assemble Dessert
- Line the bottom of a round casserole dish with vanilla wafers.
- Arrange half of the banana slices over wafers; top with half of pudding.
- Repeat layers, reserving two or three of the wafers to crumble and sprinkle over the top. Chill thoroughly.
