Meatballs are the ultimate in comfort food. They’re easy to make, tasty, and there is just something so homey about biting into one of these tasty morsels. If you haven’t tried to make you’re own homemade meatballs, I really encourage you to do so. They are one of the simplest and easiest recipes to throw together, and taste so much better than anything you can buy from the freezer section of the grocery store.
Once a month I make a triple or quadruple batch of these meatballs and freeze them for fast meals later on in the month. You can toss them in spaghetti sauce to enjoy with spaghetti squash, or take that same meatballs and spaghetti sauce and stuff them into a grain free wrap to create a meatball sub with melted mozzarella cheese, add them to soups and stews … the possibilities are almost endless.
Ingredients
- 2 lbs ground beef or turkey
- 1 green onion, minced
- 1 teaspoon sea salt
- Fresh ground black pepper to taste (About 5 or 6 grinds of a pepper mill is good for me)
- Garlic powder to taste (optional, sometimes I add it, and sometimes I don't. It just depends on what mood I'm in when I'm making them)
Directions
- Preheat oven to 350 degrees.
- Combine all of the ingredients in a large bowl. Mix just until well combined.
- Using your hands, gently roll mixture into 1 to 1 1/2 inches balls.
- Place meatballs on an ungreased baking sheet and bake for 20 to 25 minutes, turning over halfway through baking time.
- If you would like to freeze the meatballs, once they are completely cooled transfer them to a lightly greased baking sheet and flash freeze. Once frozen transfer to a freezer bag. To reheat, place frozen meatballs on an ungreased baking sheet and heat at 350 degree until hot, about 20 minutes.
