Prepare to be full and satisfied when you serve this meal. Bread, mashed potatoes and tender steak, all covered in a thick, rich gravy… delicious. Everyone in my family loved it and came back for seconds.

Beef Manhattan

3 1/2 to 4 lb. chuck roast
1/4 cup flour
1/4 tsp. salt
1/4 tsp pepper
1/4 tsp. garlic powder
1/4 tsp. seasoning salt
1 Tbs. light olive oil
2 cups beef broth
Mashed Potatoes
Beef Gravy *recipe below*

Rinse the roast in cold water.
Mix the flour and seasonings and dredge the roast in the flour mixture well.
In a large pan that will hold the roast, heat the oil over medium high heat - you want your pan and oil to be hot enough to sear the roast well when you put it in the pan.
When the oil is just about to the smoking point, put the roast in and let the meat sear until nicely browned on the bottom, then flip the roast. Let it sear for a minute or two on the second side, then transfer to a crockpot that has the beef broth added.
Cook for 4 to 5 hours on high heat, until the meat is “fork tender” and falls apart easily.
About half an hour before the roast is done, prepare the mashed potatoes.

Beef Gravy (I doubled the recipe to make sure we had plenty) :)

In a sauce pan over medium heat, melt 4 Tbs. butter. Stir in 4 Tbs. flour to make a paste. Stir and cook for 1 minute. Remove the finished roast from the crockpot and place it on a plate; cover meat with foil to keep warm.
Remove 2 cups of broth from the crockpot and slowly pour it into the flour mixture while stirring with a whisk over medium high heat.
Stir till thickened and creamy. Add a bit more broth if the gravy is to thick. Stir till smooth, then add salt and pepper to taste.

 

To assemble the Beef Manhattan;

Use 2 forks to pull the meat apart into small to medium chunks, or cut into thin slices with a knife. Place a slice of bread on a plate, put a scoop of mashed potatoes on the bread, place some of the meat on top of the potatoes, then pour lots of gravy over all. Delicious!
