These yummy bites are called Buckeyes because they resemble the nut from the Buckeye tree. If your a fan of the Reese’s Cup then you’ll love these. The Reese’s cannot hold a candle to the Buckeye though. They’re creamy, rich, and very decadent. The perfect addition to any Christmas tray.
Buckeye Candy
Ingredients
- 2 cups creamy peanut butter
- 1/2 cup butter, softened
- 3 cups podwered sugar
- 1/2 tsp vanilla
- 2 cups semi-sweet chocolate chips
- 2 tablespoons shortening
Directions
- Line a baking sheet with waxed paper.
- In a stand mixture, mix peanut butter, butter, vanilla, and sugar to form a smooth stiff dough.
- Shape into 1-inch balls. Place on prepared pan and freeze for about 1 hour.
- Melt shortening and chocolate together in a metal bowl over a pan of lightly simmering water. Stir occasionally until smooth. Remove from heat.
- Remove balls from freezer. Insert a wooden toothpick or skewer into a ball, and dip into melted chocolate, leaving a small circle at the top uncoated.
- Return to wax paper, chocolate side down, and remove toothpick. Repeat with remaining balls.
- Refrigerate for 30 minutes to set chocolate.
