I’ve said it in my blog before, I love muffins in the morning with a hot cup of coffee. Any flavor of muffin really, just as long as they’re not dry and crumbly, or to sweet. These Buttermilk Blueberry Muffins fit the bill perfectly.

Buttermilk Blueberry Muffins

2 cups flour, 1/2 white and 1/2 wheat
2/3 cups sugar
1/4 teaspoon salt
1/4 teaspoon baking soda
2 teaspoons baking powder
1 egg, beaten
3 tablespoons melted butter
1 1/2 cups buttermilk
1 cup blueberries, fresh or frozen

Mix dry ingredients in a large bowl. Make a well in the center.
In a small bowl, beat eggs with a fork, add butter and buttermilk and stir to combine.
Add liquid to dry ingredients, mix just enough to moisten all ingredients.
Gently fold in berries. (Gently dust with 1 tablespoon flour before adding to the batter.)
Scoop into a muffin tin that has been lined with cupcake papers.
Bake at 375 degrees for 25 to 30 minutes, until a toothpick inserted in the middle of one of the muffins comes out clean.

  2. haha, I've been searching for a blueberry muffin recipe this morning to make! sadly I don't have buttermilk! I'm gonna go back and check out your strawberry muffin recipe also!I need to live at your house, you are a yummy cook!
