Mom, What’s For Supper? Weekly Menu Plan 6/11

It’s going to be another busy week on the homestead. My garden is doing wonderfully, and I’m amazed at how quickly it’s growing. My Roma tomatoes are about as big as they’re going to get, and I look for them to start turning red soon. Boy will the canning begin then. This is my first year attempting to can, and I cant wait to see all those jars of tomato sauce lined up in my pantry. My Rutger tomatoes are a little slower, but there are lots of baby tomatoes hanging on the plants, so there coming along. My raspberry bushes are just about ready to harvest too, so I’ll probably start canning jam this week. Keeping my fingers crossed my first adventure into canning turns out well.

Wow… The last two months have been a whirlwind of changes for me in the blogging world. Mom, What’s For Supper? Weekly Menu Plan 4/30

What a busy time I had last week. We got all of our garden planted, except for my green beans and rainbow carrots. We have two types of cucumbers, two kinds of onions, rainbow bell peppers, cauliflower, broccoli, two kinds of tomatoes, jalapeno, leaf lettuce and Yukon gold potatoes. Ohhh I can not wait to start eating our own fresh veggies. I’m planning on doing some canning for the first time this year too. That should be an interesting experience. We also did some clearing of the back of our property next to the woods, It was overgrown with weeds, honeysuckle, and wild raspberry bushes. We cut everything down, but left several of the honeysuckle and raspberry bushes. Now that all the weeds and brush is cleared out, I’ll be able to enjoy the scenery out there, as well as be able to get to the raspberry bushes before the deer do. I can just taste the homemade jam I’ll be able to make with it now.

Well, so much for feeling better. I thought I was starting to get over my cold last week, but suffered a setback. I have had the awfullest cough this past week. I finally broke down Friday, and made myself a doctors appointment for today. Hopefully I can at least get some relief from the cough so I can sleep peacefully. The weather is supposed to finally be on a warming trend for the rest of this month, which means I can FINALLY get my garden planted. It’s been quite awhile since Spring got such a late start here in my neck of the woods.

I’m starting to feel a little better, and the temps are finally starting to warm back up again, so I will be busy getting my garden planted this week. I can’t wait till I’m able to pick my own fresh veggies to enjoy.

Mom, What’s For Supper? Weekly Menu Plan 4/9

I hope everyone had a wonderful Easter with their family. We enjoyed a relaxing weekend at home, and enjoyed a ham dinner with all the fixin’s on Sunday. It’s turned rather cool here in Southern Indiana, such a let down after all of the warm weather we were enjoying during the end of March. It has put my garden plans on hold, since we even had a few nights of frost. But the ground is broken up, and the seeds and plants are ready as soon as the weather turns warm again. Have any of you planted yet, or are you like me and still waiting? I’m still Spring Cleaning in my house. Well really it seems to have turned into an all-out organizational clean-out. I’ve been emptying closets and cabinets, and giving away or donating anything that is never used. I have the mind-set if I don’t use it, it’s going out the door. Why keep clutter, when all it’s useful for is to cause me extra cleaning and frustration. I’m sure my husband thinks I’ve lost my mind, but he knows to just leave me alone when I get in those moods. Although he has warned me not to even LOOK at his garage. :)

I’ve been so busy, that I haven’t had time to make a menu plan for the last couple of weeks, or so I thought. It’s been a huge stress factor to me, not having our suppers planned in advanced. When it turns 3:00, my mind starts spinning with the decision of what to make. I’ll admit my microwave has seen quite a bit of action lately, with last-minute defrosting of meat from my freezer. So I made myself sit down and make a menu for this week and am so glad I did. It removed a big stress from my shoulders, knowing I had my menu up on the fridge, and I could give it a quick glance and know exactly what needed to be done for that nights meal.

What a gorgeous week we had last week. Temps ranged from the high 60′s, to low 80′s. It was like Summer time, and it isn’t even Spring yet! I was able to get out and grill three times, boy how we’ve missed doing that. They’re forecasting for a chance of rain all through this coming week, so I don’t know if I’ll get a chance to grill again. I’m definitely going to enjoy the temps though, another week of 80′s. Just about perfect.
