Creamy Salsa Verde: Green Tomatillo Sauce

We are huge Mexican food lovers at our house. We seriously eat some form of Spanish type food at least once a week, if not more. What with my intolerance to tomatoes though, I thought my days of eating enchiladas were over. That is until I decided to try my hand at a recipe a Guatemalan lady I used to know in the 80′s, made for a change of pace to her tomato based version. Creamy Salsa Verde. Man could that woman cook! She made some of the best tamales, Spanish rice, and Spanish seasoned skirt steak around. It’s been over 30 years since I’ve eaten her food, but I can still remember how delicious it tasted.

No-Mato Pizza Sauce

Remember that awesome tomato free No-Mato Sauce I shared with you a few days ago? Today I’m going to show you how to turn that awesomeness into a pizza sauce, and it couldn’t be easier!

I cant rave about the basic sauce enough. For those who are allergic to tomatoes, or get severe heartburn after eating them, the sauce that this recipe starts out with is almost a blessing. The more I experiment with it, the more amazed I am. I’ve made spaghetti sauce out of it, and now pizza sauce so far. I’m still experimenting with bbq sauce and ketchup, but I know they’ll be fantastic as soon as I get the seasoning part perfected. I have all kinds of recipes running through my head, tomato-free chili, salsa, soup, zucchini lasagna… the possibilities are endless.

No-Mato Sauce ~ Tomato Free Pasta Sauce

You heard that right, a sauce that mimics tomato sauce, but without any tomatoes. I didn’t believe it either when I first found the recipe, but after making it I’m happy to say that it is possible.

No-Mato Sauce

Let me back up a little and explain how my quest for a tomato-less sauce came about. For years I’ve suffered from GERD’s. The medical term for heartburn. Not just any heartburn though, I’m talking the severe stuff. So bad that I’ve been on the strongest prescription medication they have for it for the last 6 years. Even with medication though I still suffered. Since going gluten free, I have greatly reduced my heartburn, but still had flare-ups. After starting a food journal about a month ago, I am finally starting to pinpoint the foods that give me the most trouble. Unfortunately one of them is tomatoes, one of my absolute favorite foods. Colby/Jack Cheese Sauce {Gluten Free}

My family is picky when it comes to eating vegetables. I usually have no problem getting them to eat green beans or potatoes, but when it comes to things like carrots, broccoli and cauliflower, I have to “doctor” them up a little to get them to eat it. For the broccoli and cauliflower I always made a little cheese sauce to drizzle over them, and my family gobbled them up. I’ll confess I enjoy it too. : )
