Potato Nachos

It’s time for another round of Group D reveals from the Secret Recipe Club. The club is a fun monthly challenge I host each month, where each participating blogger is assigned one of the other participating blogs. (Much like a Secret Santa.) No one reveals whose blog they have, they just visit, pick a recipe, and make it. On reveal day everyone posts what they made and the secret is out.

This month my assignment was The Spiffy Cookie, a cute blog run by Erin, a 28-year-old graduate student working towards her PhD in Microbiology. Not only can she cook, as evidenced by all of the great recipes on her blog, but she’s smart too! Now with a blog named The Spiffy Cookie you would think I’d choose a dessert. But nope, this month I actually got to choose something “I” wanted to make, and not my family. Shocking, isn’t it? I did make one of her dessert recipes for my family as well, Salted Nutella Peanut Butter Thumbprint Cookies and they will be on my blog soon. I de-gluten-fied them, and my family enthusiastically gave them two thumbs up.

Coconut Macaroons

Although I normally post with group D in The Secret Recipe Club, there was a member who was inadvertently left out and needed a partner so she could participate in group C’s reveal, and I was glad to help out. The club is a fun monthly challenge I host each month, where each participating blogger is assigned one of the other participating blogs. (Much like a Secret Santa.) No one reveals whose blog they have, they just visit, pick a recipe, and make it. On reveal day everyone posts what they made and the secret is out.

This month my assignment was the delicious blog Hugs & Cookies XOXO. Her blog is filled with drool-worthy, gluten free desserts, as well as more savory fare. Of course with so many desserts to tempt me, I just HAD to choose something sweet to make, although her Cauliflower Pizza Crust is on my list of recipes to try soon! I wound up picking her Coconut Macaroons to make and I’m glad I did.

No-Bake Peanut Butter Oat Bars

It’s time for another round of Group D reveals from the Secret Recipe Club. The club is a fun monthly challenge I host each month, where each participating blogger is assigned one of the other participating blogs. (Much like a Secret Santa.) No one reveals whose blog they have, they just visit, pick a recipe, and make it. On reveal day everyone posts what they made and the secret is out.

This month my assignment was the delicious blog K & K Test Kitchen. A blog run by the mother-daughter team Kim and Kelsey, who concentrate on using quality, common ingredients in their cooking. After browsing their recipe index, I really wanted to make their Steak and Soba Noodle Salad, which I will be soon, but my families sweet tooth won out, and I made these yummy Oat Bars instead. I played around with the recipe a bit by adding some peanut butter, since that is my favorite flavor of granola type bar.

Nutella-Filled Banana Oat Muffins

I wasn’t planning on posting a recipe today, but when I found out yesterday that we needed an extra hand in today’s Secret Recipe Club reveal, I was ready. The club is a fun monthly challenge I host each month, where each participating blogger is assigned one of the other participating blogs. (Much like a Secret Santa.) No one reveals whose blog they have, they just visit, pick a recipe, and make it. On reveal day everyone posts what they made and the secret is out.

The blog I was able to chose a recipe from was Enriching Your Kid. This blog is run by Shirley, a professional who started off as a Clinical Psychologist, then became a stay-at-home-mom after having her children. Shirley lives in India, and has a lot of tasty and healthy ethnic choices to choose from. Of course my americanized tastes led me to the recipe I decided on. That, along with my already having all of the ingredients called for on such short notice sealed the deal, Nutella Muffins.
