There are some people out there who don’t care for vegetables. Gasp, shocking I know. When it comes to vegetables, think cauliflower, broccoli, brussels sprouts, etc… folks turn their noses up and declare they don’t like them. I think it’s simply because they haven’t had it cooked in a way that they do like it. Take myself for example. If you had asked me a year ago if I liked beets, I would have very firmly said “NO, I hate beets” and I meant that literally. But after making a faux tomato sauce with beets, since I can’t eat real tomatoes, I’ve found out that I do like beets… at least in that sauce. : )

Spanish Fried Cauliflower
Back in the mid 80′s, a wonderful guatemalan woman showed me how to make a few of her delicious recipes, including this fried cauliflower. The first time I saw her preparing it, I was a bit sceptical on how it would taste. I mean, the only way I thought I liked cauliflower was raw and dipped in ranch dressing at that time. After she whipped up a batch of them though, my skepticism quickly turned to delight as I enjoyed some of the best cauliflower I had ever eaten. This Coliflor Envuelta en Huevo (cauliflower coated in egg) is a common dish in Guatemala, and is similar to tempura. The difference being that the coating is pillowy, instead of crispy and light.
Basic Asian Fried “Rice”
I’ll admit it, I have an addiction… to cauliflower rice! I seriously eat it at least 3 times a week. Cauliflower rice? Now hear me out before you turn your nose up at the idea of cauliflower being used as a rice replacement. This versatile vegetable is low calorie, grain and gluten free, and absolutely delicious. This fried “rice” recipe I’m going to share with you today is a perfect example.
Spiced Sweet Potato Fries with Maple Mustard Dip
I cant believe that November is almost over! In just a few days it will be Thanksgiving, then Christmas will be here before we know it. The end of the month also means it’s time for another Secret Recipe Club Reveal for Group D. What’s The Secret Recipe Club you ask? Why, just the original and most fun Secret Santa of the food blog world! Members of the club are assigned another members blog each month. They pick any recipe from that blogger’s site, make it and write about it. Who has who is a secret until reveal day though (today!). There’s also a link hop at the end of the post so that I (and you) can check out all the other participating blogs and the great recipes they made.
My assignment this month was The Wimpy Vegetarian, a blog written by Susan, a former sales and marketing professional who retired early and decided to go to culinary school. Some people would freak at changing careers so late in the game, but not Susan. She had a dream and went for it. Her cooking style is what is called Flexitarian, a diet that is plant-based with the occasional inclusion of meat products. Very similar to my eating style. She’s a cooking contest winner too, with recipes that include Roasted Cauliflower Soup with Chimichurri and Poblano Creme Fraiche, Rosemary Ciabatta with Stout Beer, Orange Ricotta Pillows with Lillet Kumquat Compote, Crispy Delicata Rings with Currant, Fennel and Apple Relish, and Farmhouse Harvest Soup. Quite an accomplishment!
