Who would have thought that a main dish that has so few ingredients, would be so filling and have so much flavor? I’m always looking for different dishes that use other meats besides beef or chicken. So when I stumbled across this recipe, I was super excited. I tweaked it to suit my families tastes and came up with a winner. Just four simple ingredients, plus seasonings and you have a tasty and satisfying meal. Add some fluffy dinner rolls on the side and your good to go.
Cheesy Potatoes and Smoked Sausage
Ingredients
- 10 small potatoes, with the skin on (I used gold potatoes)
- 1 package smoked sausage (I used the kind that comes two in a pack)
- 1 cup shredded colby/jack cheese
- 6 Tbs butter (divided)
- 1 tsp. onion powder
- salt and pepper to taste
Directions
- Preheat oven to 400 degrees
- Place 2 Tbs butter into a 9 x 13 pan and place into oven as it preheats for 2 minutes.
- Scrub potatoes clean and cut them in half, or into quarters, depending on how big they are.
- Remove the pan from the oven and place the potatoes into the pan with the melted butter and sprinkle with onion powder, salt and pepper. Stir well to coat potatoes with butter.
- Dot the potatoes with the rest of the butter, cover with a sheet of aluminum foil and bake for 30 minutes.
- Remove pan from oven and add the smoked sausage that has been cut up into pieces. Give it a stir, recover with the foil and bake for another 30 minutes.
- Remove pan once again and check potatoes with a fork to make sure they are tender.
- Add cheese to potatoes and sausage and stir gently to mix. Place back in the oven, uncovered for 5 more minutes, or until cheese is melted. Serve
