Chicken A La King

Chicken a la King is a close cousin to chicken pot pie and every bit as delicious. When I was growing up it was served over white toast. I sometimes serve it over biscuits as well. It’s delicious both ways.

Chicken A La King

Serves 6 to 8 people

Ingredients

  • 1/2 cup butter
  • 1/2 cup celery, chopped fine
  • 1/2 cup white onion, chopped fine
  • 1 cup mushrooms, chopped fine
  • 1/2 cup flour
  • 1/8 teaspoon garlic powder
  • 3 cups chicken broth
  • 1 can evaporated milk
  • 5 cups cooked chicken, shredded
  • salt and pepper to taste

Directions

  • Melt butter in a large saucepan. Add garlic powder, celery and onion and saute until soft.
  • Add flour to mixture and cook, stirring occasionally until bubbly.
  • Add mushrooms with juice and chicken broth and bring to a boil. Cook for 5 minutes or until thick , stirring occasionally.
  • Reduce heat. Stir in chicken, milk and salt and pepper to taste and cook until heated through, stirring occasionally.
  • Serve over biscuits or toast.
