Chicken a la King is a close cousin to chicken pot pie and every bit as delicious. When I was growing up it was served over white toast. I sometimes serve it over biscuits as well. It’s delicious both ways.
Chicken A La King
Ingredients
- 1/2 cup butter
- 1/2 cup celery, chopped fine
- 1/2 cup white onion, chopped fine
- 1 cup mushrooms, chopped fine
- 1/2 cup flour
- 1/8 teaspoon garlic powder
- 3 cups chicken broth
- 1 can evaporated milk
- 5 cups cooked chicken, shredded
- salt and pepper to taste
Directions
- Melt butter in a large saucepan. Add garlic powder, celery and onion and saute until soft.
- Add flour to mixture and cook, stirring occasionally until bubbly.
- Add mushrooms with juice and chicken broth and bring to a boil. Cook for 5 minutes or until thick , stirring occasionally.
- Reduce heat. Stir in chicken, milk and salt and pepper to taste and cook until heated through, stirring occasionally.
- Serve over biscuits or toast.
