Chicken Fricassee

This recipe is from the mini-holiday recipes I promised to share. President Abraham Lincolns birthday was on February 12 in 1809. Fricassee of chicken was one of Abraham Lincoln’s favorite dishes, and is a delicious, old fashioned way to prepare chicken. Even my kids who were turning up their noses while I made it, loved it.
Chicken Fricassee
5 Chicken leg quarters, separated
1/2 cup all-purpose flour
1 teaspoon garlic powder
2 teaspoon Chicken Seasoning, divided (Mrs. Dash)
1 teaspoon paprika
1/4 teaspoon salt
1/4 teaspoon pepper
Chicken Broth
1 medium Onion, chopped
2 cloves Garlic, minced
1 stalk Celery, chopped
1/2 Bell Pepper, seeded and chopped
1 tsp. Chicken Seasoning
1 can Evaporated Milk
Salt and pepper to taste
Rinse the chicken pieces and set aside. Place the flour, garlic powder, 1 tsp. Chicken Seasoning, paprika, salt and pepper in a large bowl and mix well. Dredge the chicken pieces in the flour mixture, then place in a deep pan that has been lightly coated with canola oil and heated over medium heat. Brown the chicken on both sides, then set aside.
Add the next five ingredients to the pan and sauté over a moderate heat until the onions are translucent and the vegetables are hot. Return the chicken pieces to the pot and pour in just enough chicken broth to cover. Bring to a boil, then reduce the heat to maintain a rapid simmer and cover with a tight fitting lid. Cook until quite done but not falling off the bones, about forty five minutes.
Remove the chicken to a plate and keep warm. Turn up the heat and cook, stirring frequently until the amount of liquid has reduced by about half. Return the chicken to the pot, pour in the cream and simmer until hot. Season to taste with salt and pepper.
