For a scrumptious holiday cookie, with a sweet and nutty surprise inside, this cookie is a must have. Imagine buttery bites of yummy-ness, that melt in your mouth. My daughter says they taste just like the tins of cookies you see during the holidays, only better! A real treat for this time of year.
Chocolate Almond Snowball Cookies
Ingredients
- 1 1/2 cups butter (3 sticks)
- 2/3 cup powdered sugar
- 2 tsp. vanilla extract
- 4 cups flour
- 2 tbsp. ice water
- 1 1/2 cup Chocolate Covered Almonds
Directions
- Preheat oven to 300 degrees.
- Cream the butter, then beat in the powdered sugar and vanilla extract.
- Work in the flour and ice water. Shape and roll into balls.
- Push 1 chocolate almond into each ball, making sure the chocolate is completely covered.
- Bake for 30 - 35 minutes on a parchment paper lined cookie sheet.
- After baking, roll in sifted powered sugar while hot. Cool and roll again in the powdered sugar.
