The humble but delicious Chocolate Chip Cookie. We all have our favorite way of making this tasty morsel. But for those who are looking for a no-fail recipe, that delivers a tasty cookie every time, then this is for you. They never last long in my house. *Warning* Not for the dieters or health conscious out there. :)
Chocolate Chip Cookies
1 cup Lard or Vegetable Shortening
1/2 cup Butter, softened
1 cup White Sugar
1 cup Brown Sugar
1 Tbs Vanilla
4 Eggs
3 1/2 cups All-Purpose Flour
2 tsp Baking Soda
1 tsp Salt
2 cups Semi-Sweet Chocolate Chips
Preheat oven to 350 degrees.
Mix together the lard, butter, and sugars in a stand mixer till they are well blended and the mixture is light and fluffy.
Add the vanilla and eggs and blend well.
In a separate bowl, whisk together the flour, baking soda and salt until well combined.
Slowly add the flour mixture to the butter mixture in the stand mixer until it is completely combined and has formed a dough.
Hand-stir in the chocolate chips until incorporated.
Drop dough by rounded tablespoon full onto cookie sheets that have been lined with either a silpat mat or parchment paper, leaving room between the cookies for spreading.
Bake for 10 minutes, or until lightly browned.
Remove from oven and allow to cool for about 5 minutes, then transfer to a cooling rack to finish cooling completely.
Makes about 5 dozen cookies.
