When I first saw this delectable looking coffee cake I couldn’t wait to try it. Two of the ingredients listed are cream cheese and chocolate chips, how could it NOT be good? Well let me tell you, I was not disappointed. The coffee cake was soooo yummy, and my family made short work of finishing it off, not a crumb is left. If that doesn’t attest to how good it is, then I don’t know what would. This is a very rich and decadent cake, and would make a perfect addition to a breakfast or dessert buffet during the holidays, or any time you want to make a special brunch for your family. I made a few minor changes to the regular recipe, such as adding a full cup of chocolate chips, instead of the called for 6 oz. I also baked it in an 8 X 8 pan instead of two loaf pans.
Chocolate Chip Cream Cheese Coffee Cake
Adapted From: Alicia’s Homemaking
1/2 cup butter
8 oz cream cheese
1 1/4 cups sugar
2 eggs
1 tsp vanilla
2 cups flour
1 tsp baking powder
1/4 tsp salt
1/4 cup milk
6 oz 1 cup chocolate chips
Cream together sugar, butter, cream cheese, and eggs. Add vanilla, salt, and baking powder, while mixing. Add flour in bit by bit, mixing as you go, keeping the mixture smooth. Add milk (may not require full amount of milk…you want a creamy dough, not a drippy dough). Then fold in the chocolate chips. Pour into greased and floured (2) loaf pans 8 X 8 pan. Bake at 350 for 40-45 minutes (or 30-35 minutes for mini loaves). Loaves are done when the top is golden brown and/or a toothpick inserted into the middle comes out clean. Yields 2 loaves (or 3-4 mini loaves).
