My hubby was in the mood for something sweet this morning, so I pulled this recipe out that I’ve had in my, “Try It” file for awhile. Hubby is still not totally sold on the whole wheat thing, so I used all-purpose flour this time. Men can be so stubborn! These muffins are moist and delicious, my family gobbled them up.

Chocolate Chip Muffins
Adapted From: All-Recipes.com

2 cups all-purpose flour
1/4 cup white sugar
1/4 cup brown sugar
2 teaspoons baking powder
1/2 teaspoon sea salt
1 c milk
1/3 cup canola oil or melted butter
1 egg
1 c semi-sweet chocolate chips

Heat oven to 400 degrees. Grease bottoms only of 12 muffin cups or line with baking cups.
In a medium bowl, combine flour, sugar, baking powder, chocolate chips, and salt; mix well. In a small bowl, combine milk, oil and egg; blend well. Add dry ingredients all at once; stir just until dry ingredients are moistened (batter will be lumpy.)
Fill cups 2/3 full. Bake for 18 to 20 minutes or until toothpick inserted in center comes out clean. Cool 1 minute before removing from pan. Serve warm.

Makes 12 regular size muffins.
