I’ve tried many times over the years to make fudge, but failed miserably. So much so that I gave up and just bought pre-made fudge when I had a craving for some. Recently though, my sweet hubby said he would love some fudge, but not just any fudge, he wanted homemade. So off I went once again on an internet search for a, hopefully, fail proof fudge. I finally found one that seemed pretty easy, and had good reviews from those who had already tried it. I set to work and lo and behold, it set up! I was super excited that I had FINALLY been successful at making fudge. It came out firm, but still creamy and rich.
Chocolate Pecan Fudge
Ingredients
- 1/2 cup butter
- 1 cup semisweet chocolate chips
- 1 teaspoon vanilla extract
- 2 cups white sugar
- 1 (5 ounce) can evaporated milk
- 10 large marshmallows
- 1 cup chopped pecans or walnuts
Directions
- Line an 8x8 inch baking dish with aluminum foil.
- Place butter, chocolate chips and vanilla in a mixing bowl. Set aside.
- In a medium saucepan over medium high heat, combine sugar, milk and marshmallows.
- Bring to a boil, stirring frequently. Reduce heat to low and cook 6 minutes more, stirring constantly. Remove from heat.
- Pour marshmallow mixture over contents of mixing bowl.
- Beat entire mixture with a beater until it thickens and loses its gloss. (About 3 minutes)
- Quickly fold in nuts and pour into prepared pan.
- Refrigerate overnight. Lift fudge from dish by the foil. Peel foil off, and cut fudge into small squares.
- Store leftovers in the refrigerator.
