One of the recipes I’m sharing with you today, is part of group B’s reveal from The Secret Recipe Club. It’s a fun blogging club where each month you are assigned a blog and your mission is to go and find a recipe, make it, blog it and reveal it on a certain day along with everyone else. Thing is, it’s a secret all month. So you can’t tell your blog assignment that you have them or it will spoil the surprise.

This past Monday, a wonderful blog, that has some really yummy recipes didn’t have a recipe from her blog shared, so today she will! Trisha from My Hobbie Lobbie is a busy lady, a full time baker and crafter who specializes in a wide range of products for parties.

My husband Joe has a huge sweet tooth, so when I visit a blog I usually check out their dessert section first, to see if I can find a new treat to make for him. Trisha’s Coconut Toffee caught my eye. This candy only needs 4 simple ingredients to make a confection that will satisfy any sweet tooth. Make sure you cut this into small pieces, because trust me, just a little is all you need to get your sugar fix.

Coconut Toffee

I think this would taste fantastic with chopped pecans added, which I'll be trying next time.

Ingredients

  • 1 1/2 cups sugar
  • 1/2 cup water
  • 2 cups desiccated coconut (unsweetened)
  • A pinch of ground cardamom
  • A couple of drops of food coloring of your choice (optional)

Directions

  • Line an 8-inch square baking pan with parchment paper overlapping the sides (for easy lifting).
  • In a heavy bottomed 3-quart saucepan over medium heat, mix the sugar and water, stirring occasionally. Cook until the mixture reaches soft ball stage, 235 degrees on a candy thermometer. Stir in the coconut, cardamom and food coloring, if using.
  • Cook until the coconut has absorbed the sugar mixture, about 1 to 2 minutes
  • Quickly spread the mixture evenly into the prepared pan. Allow it to cool and harden. Cut into small squares.

  1. Oh, MY! I love coconut, too! These look, well, very sinful and heavenly, all at the same time. My husband will love me forever if I fix these. What a sweet lady you are to make these for our SRC orphans!
