Cottage Pie - Primalfied

With Fall quickly turning into Winter here in Southern Indiana, our menu has turned to filling comfort foods. For us that means lots of hearty soups, stews, and casseroles. One of our favorite casseroles on the homestead is Cottage Pie. Not to be confused with shepherd’s pie which is lamb based, cottage pie uses economical ground beef, along with veggies and a fluffy mashed potato topping. Until now.

Primal Cottage Pie

While I haven’t sold my family on the idea of mashed cauliflower yet, I’m slowly changing their minds. The simple recipe I make is super easy to put together, and taste almost like mashed potatoes in my opinion. They grudgingly admitted that it was tasty when I had them try a bite, but still insisted on using mashed potatoes on their version when I made it for supper recently. I did switch the flour that is normally called for with coconut flour, and they never even noticed the difference. The filling isn’t quite as thick as with a regular cottage pie, but the flavor is fantastic non the less.

Cottage Pie – Primalfied

This Cottage Pie is Primal and Gluten Free, but you cant even tell!

2 lbs ground beef
1 to 1 1/2 cups diced carrots {Depending on how well you like carrots}
1 medium sweet onion, diced
2 cloves garlic, minced
1 cup beef broth
1/8 cup coconut flour
2 teaspoons thyme, crushed
2 teaspoons rosemary, crushed
salt and pepper to taste
For The Cauliflower Mash
1 large head cauliflower
1/4 cup milk
2 tablespoons butter, softened
salt and pepper to taste

Preheat oven to 400 degrees.

Break cauliflower into florets and place into a medium pot. Add enough water to cover completely and boil over high heat until tender. (15 - 20 minutes).

Drain cauliflower and place in a food processor. Add milk, butter, salt and pepper and puree until light and fluffy. Set aside.

In a large pan over medium heat, saute ground beef with carrots, onions and garlic until beef is browned.

Add beef broth, thyme, rosemary and coconut flour to the meat, and simmer until mixture is heated through. Season with salt and pepper to taste.

Transfer meat mixture to a lightly greased 9 x 13 baking dish and spread the cauliflower mash evenly over the meat. Sprinkle with a little paprika for some color if desired.

Bake for 25 minutes, then turn heat up to broil and cook for an additional 10 minutes, or until the cauliflower develops a golden brown crust.

Serve immediately.
