My mom used to make THE BEST peanut butter fudge, and I have yet to find a recipe that matches up to hers. Unfortunately she passed away in 96′, and with her, the recipe for that awesome fudge. It’s one of the few recipes of her’s that I never wrote down, and I regret it.
BUT, I have found a very good peanut butter fudge that is a close second to hers, and it couldn’t be easier to make. No candy thermometers or intensive stirring required. It only takes 4 ingredients as well! You all know how I am about delicious and easy, they’re two of my main requirements when it comes to a recipe. Don’t let it fool you because it has so few ingredients though, this fudge is so good. It’s smooth, creamy and rich, and got 2 thumbs up from my entire family.
Line the bottom and sides of an 8 inch square pan with aluminum foil. Butter the foil and set aside.
Place the peanut butter and butter in a large microwave safe bowl and heat in the microwave for one minute on high. Stir and continue to microwave in 30 second increments, stirring each time, until the peanut butter and butter are completely melted.
Using a wooden spoon, stir in the vanilla extract and powdered sugar until thoroughly blended.
Spread the fudge into the prepared pan, smoothing the top with the back of a spoon or your fingers.
Cover with another sheet of foil and refrigerate until firm (two hours).
Cut into 1 inch pieces and serve. Fudge can be stored in the refrigerator in an air-tight container for up to one week.
