As promised in my How To Get The Most Out of Your CSA post, here is a roundup of recipes I’ve collected from around blogland, to give you one easy place to find ideas on how to cook up all of that delicious fresh produce you will receive in a CSA box. I’ll be concentrating on what I’m mainly getting in my own CSA box at this time, and will share more CSA roundups as the season progresses, to stay up to date on what fresh produce is in season.
What I love most about getting vegetables through a CSA share (No fruits yet, but they will be ready to pick soon)! is that it challenges me. “Wow, I got a lot of chard and radishes in this weeks box, what can I do to incorporate them into my meals, instead of going to the store and buying other vegetables”? Everything tastes so much better when it’s eaten within a few days of being picked, so it’s worth a little searching to find new and interesting ways of cooking what you already have. It forces me to cook outside my comfort zone, to try new things, and experiment, which saves me money as well.

Without further ado, on to the roundup!

Veggie Tips
*Did you know you can use green onions in place of regular onions in recipes? Give it a try, they work great!
*Grill em! You can grill just about any vegetable. Just brush them with a little olive oil, along with some salt and pepper, and grill until slightly softened and starting to brown. Delicious!
*Make a stir fry. They taste amazing, make a great lunch or light dinner, and can be seasoned to your taste. Just cut the veggies into uniform sizes, heat a tablespoon or two of olive oil in a wok or large pan, add the vegetables and cook over medium heat, stirring occasionally until they are crisp tender. Add your choice of seasonings, I like salt, pepper, and garlic powder, and dig in.
