I’ve been seeing all kinds of cute Easter themed desserts around blogland the last several weeks, so I decided to have some fun and make a few with my daughter. There are several versions of this pretty and fun dessert out there, but we think our version is the cutest. :) Rich, delicious fudge, covered with a yummy layer of melted marshmallow, then sprinkled with cute, Easter-colored M & M’s. The possibilities are endless. Red and green M&Ms for Christmas, pink, red and white for Valentines, green for St. Patrick’s Day, red and blue for Fourth of July, brown and orange for Halloween, and even Reese’s Pieces for Thanksgiving. What a fun dessert to add to your dessert table for the holidays.

Easter Brownies

These are not neat brownies, they are ooey, gooey and delicious!

Easter Brownies

1 cup butter
1 1/2 cups sugar
3 eggs
1 1/2 teaspoons vanilla
2/3 cup unsweetened cocoa powder
1 cup all-purpose flour
1/4 teaspoon salt
1/2 teaspoon baking powder

4 cups miniature marshmallows
1 cup Easter colored M&M’s

Preheat oven to 350 degrees. Grease a 9 X 13 inch pan.
Melt butter, and stir in sugar, eggs, and vanilla. Beat in cocoa, flour, salt, and baking powder until well blended. Spread batter into prepared pan.

Bake for 25 minutes, do not over bake, then remove brownies from oven and sprinkle with marshmallows. Bake 5 minutes longer or until marshmallows are puffed and slightly golden. Remove from oven, wait one minute, then sprinkle with M&M’s. Allow to cool completely before cutting.
