While these sweet rolls don’t exactly have the same texture as a cinnamon roll made with yeast, they are a lot simpler to make, and come out with an almost biscuit texture. They are softer though and no less delicious then their yeast counterpart. So when your in the mood for a cinnamon roll, but don’t want to wait, give these a try.
Easy No Rise Cinnamon Rolls
Adapted From: The Life Of Us
2 1/2 cups flour
1/4 cup sugar
1 Tbs baking powder
1/2 teaspoon salt
1/4 teaspoon baking soda
1/2 cup butter, softened
1 cup of milk
*Extra softened butter, about 3/4 stick
Cinnamon and Sugar Mix
1/2 cup white sugar
1 tablespoon cinnamon
Combine the sugar and cinnamon in a small bowl, using a fork or small whisk to thoroughly blend the two together.
Preheat oven to 425 degrees
Mix together dry ingredients.
Add butter and blend in with a pastry blender.
Add milk and stir just until combined.
Place on a floured surface and knead 5 or 6 times.
Roll out into a large rectangle, adding a little extra flour if needed.
Spread softened butter all over the rolled out dough, then sprinkle 4 Tbs. (or to taste) of cinnamon sugar mixture over butter.
Roll up starting at short end, then pinch together seam.
Cut into slices, then place rolls in a 8×8 pan that’s been sprayed lightly with cooking spray.
Bake for 15 minutes, or until tops are golden brown.
Once done, place icing on rolls.
Icing
3oz cream cheese, softened
4 Tablespoons buttermilk
1 cup powdered sugar
To make the icing, mash together softened cream cheese and powdered sugar with a fork until smooth. Whisk in buttermilk, 1 Tablespoon at a time, until creamy. Drizzle onto hot cinnamon rolls and spread evenly.
