EASY Peanut Brittle

I began an internet search one day looking for an easy Peanut Brittle recipe to make for the holidays, that didn’t require the use of corn syrup. After quite a bit of searching I finally found one, and it only takes three simple ingredients. That’s right, just three! I thought it surely wouldn’t work, but decided to give it a try with a small batch. Rich, crunchy peanut brittle was the result. If your a peanut brittle fan, this recipe is a definite must try.

EASY Peanut Brittle

About 1 pound

Ingredients

  • Butter for greasing baking pan
  • 3 cups sugar
  • 1 cup water
  • 2 cups roasted peanuts, salted or unsalted, or other nuts

Directions

  • Use a bit of butter to grease a baking sheet well, preferably one with a low rim.
  • Combine sugar and water in a heavy skillet that has been rubbed with butter, on bottom and sides to the top and turn heat to high. Stir occasionally with a wooden spoon until mixture starts to boil. Stop stirring, cover with a lid and cook for 3 minutes. Remove lid. Do Not Stir!
  • Reduce heat to medium and cook till syrup is a light amber color, or until a candy thermometer registers 240 degrees.
  • Stir in the peanuts.
  • Working quickly, pour mixture onto greased baking sheet and spread out thin with a buttered spatula.
  • Cool completely then break into pieces.
  • Store in a covered container for up to two weeks.
