Easy Refried Beans

Whats a Mexican meal without some warm refried beans on the side? Boring! It’s so easy to make your own with a little advanced preparation, that there’s no need to rely on those canned beans. Homemade taste so much better.

Easy Refried Beans

Ingredients

  • 2 1/2 cups of dry pinto beans (about 1 lb)
  • Water
  • 3 strips bacon, cooked and crumbled, (Reserve bacon grease)
  • water
  • 1 Tbs. salt
  • 1 Tbs. minced onion
  • 1 tsp. cumin
  • salt to taste

Directions

  • Rinse the beans in water and remove any small stones, pieces of dirt, or bad beans.
  • Place beans in a pot and cover with at least 2 inches of water. Let soak overnight.
  • Drain water and cover with about 2 inches of clean water in your crock pot.
  • Add crumbled bacon, then turn crock pot on high for one hour. Switch to low and cook for an additional 5 to 6 hours. Add salt during last 1/2 hour of cooking time.
  • Remove and reserve liquid from beans, then mash beans with a potato masher, adding reserved liquid till you reach the desired consistency you want.
  • Place mashed beans into a medium pot, along with bacon grease, cumin, minced onion and salt to taste. Cook over medium heat till beans are heated through.
  • Taste for seasonings and serve.
