It’s time for another round of Group D reveals from the Secret Recipe Club. The club is a fun monthly challenge I host each month, where each participating blogger is assigned one of the other participating blogs. (Much like a Secret Santa.) No one reveals whose blog they have, they just visit, pick a recipe, and make it. On reveal day everyone posts what they made and the secret is out.

This month my assignment was the delicious The More Than Occasional Baker, a blog run by Ros, who loves baking and is always looking for the next baking challenge. After browsing her recipe index, I really wanted to make the Flourless Almond Cake with Raspberries, but my family overruled me and asked me to make something chocolate. “Hey” I said, “I’m the one that has to cook it”. To which they replied, “Yeah, but we’re the ones who have to eat it”! Wow, I REALLY need to start searching my assigned blog by myself from now on, so I can maybe make something I want once in awhile. : )

Flourless Chocolate Walnut Cookies

I wound up making her Flourless Chocolate Walnut Cookies and they were really good. We all enjoyed their rich, fudgy, cake like texture, and I was happy to find another gluten free dessert that I could eat along with my family. I changed the recipe around some by using honey instead of sugar, something I’ve cut it out of my diet, and I used a whole egg instead of egg whites. I also had to increase the walnuts to 1 1/4 cups to compensate for the extra liquid from the honey. I ended up with a delicious cookie, that even my gluten loving family really enjoyed. Chocolate Walnut Cookies

Flourless Chocolate Walnut Cookies

Makes 12-14 cookies.

Delicious gluten and grain free cookies with no processed sugar.

Ingredients

  • 1 1/4 cups chopped walnuts
  • 1/4 cup cocoa powder
  • 1/4 cup honey
  • 1 large egg
  • 1 teaspoon vanilla

Directions

  • Preheat oven to 350 degrees.
  • Line a cookie sheet with parchment paper or a silpat mat.
  • Place all of the ingredients into a bowl and mix until well combined.
  • Drop dough by tablespoonfuls onto the cookie sheet, shaping them into ball shapes.
  • Bake for 8-10 minutes, or until the cookies are fairly firm to the touch, with little give.
  • Allow the cookies to remain on the cookie sheet for 10 minutes, then move to a rack to finish cooling completely.

    • I do too Melissa, rich usually means it doesn't take much of them to satisfy you. Always a plus in my book when it comes to calories.
