I love having a muffin and cup of coffee for breakfast, as I check my emails and website. So when I came across this recipe I knew I was going to make them right away. They were pretty simple to make, and they taste great. They’re moist, delicate and not to sweet. Just right.
Fresh Strawberry Muffins
1/2 cup butter, softened
3/4 cup sugar
1 egg
2 cups flour
2 tsp baking powder
1/2 tsp salt
1/2 cup milk
1/2 tsp vanilla
1 1/2 cups chopped strawberries (fresh, not frozen)
For The Topping
3 tsp sugar
1/2 tsp cinnamon
Cream the butter and sugar together. Add the egg and mix well.
In a bowl, whisk together the flour, baking powder and salt until combined.
Blend together the milk and vanilla.
Add flour mixture and milk alternately to sugar mixture, being careful not to over mix.
Gently stir in strawberries.
Spoon batter into paper lined muffin pans.
Combine sugar and cinnamon and sprinkle over muffins.
Bake at 400 degrees for 20-25 minutes, or until a toothpick inserted in the middle of a muffin comes out clean.
Makes 12 muffins.

Funny, I was just looking online for strawberry muffin & bread recipes last night. I love having muffins or breads on hand for quick breakfasts with coffee or smoothies. These look great, I'll definitely be trying these out!

can i use margarine instead of butter?
Hi Maria, Margarine can be substituted for butter, but it may affect the taste and texture slightly. It will still make a good muffin. Do NOT use lowfat spreads or light butter for baking though. They contain to much water to be used in baked goods.
