Fried Zucchini
There are so many yummy recipes for zucchini out there, that my supply of frozen, shredded zucchini will disappear soon I’m afraid. This versatile veggie is plentiful in markets and gardens right now though, so I shouldn’t have any problem getting more. Here is one of the easiest ways of preparing it and a family favorite, fried zucchini. Whenever I make this, it disappears almost as fast as I can fry it. Slightly crispy on the outside, but soft on the inside makes a winning and simple side dish that my family loves.
Fried Zucchini
Ingredients
- 2 - 3 small zucchini
- 2 large eggs
- 2 cups gluten free all-purpose flour
- 1 teaspoon sea salt
- 1/4 teaspoon fresh ground pepper
- Oil for frying (I use light olive oil)
Directions
- Wash zucchini, then cut into thin slices. (Throw away the end pieces.) Set aside.
- Heat oil over medium-high heat in a heavy skillet. (About 1/8 inch)
- Place eggs in a shallow bowl and beat well. Place flour into a separate bowl, and add salt and pepper and whisk to combine.
- Dip the zucchini slices into the eggs, then dredge in the flour.
- Place in the pan to fry, do not crowd. Brown slices on both sides.
- Times vary on this because of the water content in the zucchini, but start with 2 to 3 minutes per side, then go from there.
- When finished browning, place onto a paper towel lined plate. Sprinkle lightly with salt and serve immediately.
- Be careful and keep an eye on the oil. If it starts to smoke, turn it down some and allow to cool a little before frying more zucchini. They WILL burn, so stay with them as they fry.
Notes
A word of warning, don’t skimp on the salt – that’s what gives this dish it’s great flavor.
