It’s time for Group D’s reveal of the Secret Recipe Club. My assignment this month was Fabulously Fun Food, a blog owned and written by the talented Melanie. This lucky woman lives in Nashville TN. which is on my bucket list of places to visit one day. She used to live in Germany, which I think is really cool to because my grandpa is from there.
As I was browsing Melanie’s blog, I was intrigued by her recipes for Grilled Chicken and Pasta in Fresh Basil-Cream Sauce and Thai Noodles with Peanut Sauce. But alas my sweet-tooth husband struck again, and convinced me to make him something sweet. I really need to start looking at my assignment when my husband is busy with other things. :)
So to make my sweet husband happy, I chose to make her Super Amazing Brownies. They looked and sounded delicious, and were the perfect choice since I had all of the ingredients I needed already in stock. What really caught my attention is that these brownies are made with cocoa powder. All of the other recipes I’ve found online call for bakers chocolate, something I normally don’t keep a supply of. I’m all for super easy recipes, so I did tweak the recipe a bit by blending everything together as is, where as Melanie makes a chocolate sauce out of her cocoa first. I’m not able to stand over the stove long enough to do that though, so my easier method had to do.
And guess what? They turned out perfect! They were so rich, moist and decadent, pure chocolate bliss. I’m not kidding, they are that good. These fudgy brownies are about as perfect as you can get, and beat a boxed mix by a mile. They don’t even need the addition of nuts, their flavor is outstanding just as they are. You can certainly add them if you wish, but why mess with perfection? And they’re easy to make! I did it all with one bowl and a spoon, no need to dirty your stand mixer.
Ingredients
- 10 tablespoons unsalted butter
- 1 1/4 cups sugar
- 3/4 cups + 2 tablespoons unsweetened cocoa powder
- 1/4 teaspoon salt
- 1/2 teaspoon pure vanilla extract
- 2 large eggs, cold
- 1/2 cup all purpose flour
Directions
- Heat oven to 350 degrees.
- Line a 9-inch square baking pan with either aluminum foil or parchement paper.
- Stir together butter, sugar and vanilla in a bowl, mixing until well blended with a spoon.
- Add eggs and beat well.
- Add the cocoa powder, salt and flour to the egg mixture, beating until well blended.
- Spread batter evenly in prepared pan.
- Bake 20-25 minutes or until a toothpick comes out with a few crumbs clinging to the toothpick.
- Cool completely in pan on a wire rack.
- To make cutting the brownies easier, place the pan in the freezer for about 20 minutes. (After they have cooled completely at room temperature first)
- Lift up the ends of the parchment paper or foil, and transfer the brownies to a cutting board. Cut into 12 to 16 pieces.

I love brownies and always have problems with them being too flat in the middle. these look so good! I live in a very high altitude, so I think this is partly why mine always sink?
