Due to an oversight on my part, I forgot that I was supposed to post TWO recipes today for the Secret Recipe Club. My apologizes to Kirstin from Loving Life. All I can say is I’ve been pretty sick off and on this past month, and it slipped my mind. After remembering my snafu, I quickly went to her blog and was pleasantly surprised and happy to find a recipe I’ve been wanting to make for a long time, German Pancakes.
I LOVED how high the pancake climbed while baking, I was impressed. My family couldn’t believe it when I first pulled it out of the oven., and were disappointed to see if finally deflate. I replaced the flour with coconut flower and arrowroot powder to make it grain free. It will definitely be on our regular menu. Thank you Kristin for another yummy addition I can add to my recipe box.
Ingredients
- 8 eggs
- 1 cup milk
- 1/4 cup coconut flour
- 6 tablespoons arrowroot powder
- pinch of salt
- 2 tablespoons butter
Directions
- Preheat oven to 400 degrees.
- Add butter into a 9 x 13 pan, then place pan into the oven to allow the butter to melt. Remove pan from oven and set aside.
- Place eggs, milk, flour, arrowroot powder and salt into a large bowl and whisk together until thoroughly blended.
- Pour egg mixture into the prepared pan and bake for 20-25 minutes, or until puffed and becoming browned around the edges.
- Serve with your choice of toppings. Some of our favorites are maple syrup or fresh fruit sauce.

like you, I've always wanted to make German pancakes, but so far I haven't been able to. We are not big breakfast eaters, so we might wait until we have company sleeping over.

Awww thanks, and no worries…I understand completely….Praying for complete healing to your body and glad your family liked the German Pancake…My girls ask for it often. Sometimes I half the recipe because I don't want to use all my eggs and make it in a pie pan instead.

My mom used to make these for us for dessert all the time. She also made another variation called kaisershmarm that was amazing…and you just inspired me to search out her recipe!
