Gluten-Free Buttermilk Cornmeal Waffles

Don’t let the thought of cornmeal in these waffles scare you off. It adds a delicious richness to them that takes them over the top in the taste department. I made these for my family today, but didn’t tell them they were gluten-free. They couldn’t tell the difference! When I let them in on the secret after they finished eating, they didn’t believe me. :) They really are that good.

Gluten-Free Buttermilk Cornmeal Waffles

3/4 cup sweet white rice flour
1/2 cup brown rice flour
1/2 cup tapioca flour
1/2 cup corn meal
3/4 tsp sea salt
3/4 tsp baking powder
3/4 tsp baking soda
1/4 tsp xanthan gum
3 Tbs sugar
2 large eggs
1 1/2 cups buttermilk
1/2 cup warm water
3 Tbs melted butter
2 Tbs honey
1 tsp vanilla

Mix together all dry ingredients with a whisk in a large bowl. Add the wet ingredients and mix well until smooth. Cook in your waffle iron according to manufactures instructions. Mine took about 8 minutes each. Serve with your choice of toppings.
