I meant to post this recipe a few days after Thanksgiving but after everyone in the house, including myself came down sick with everything from severe colds, to sinus and ear infections, blogging kind of took a back seat for a few weeks while we all recuperated. Now that everyone is pretty much back to normal, well, as normal as can be expected for my family : ) I can finally share this delicious sandwich with you.
After the big turkey day we call Thanksgiving, you may feel like you never want to see turkey again, or at least for a few weeks. What to do with the leftovers then? Besides pulling the meat from the bones and freezing it for future use in soups and things, such as my Creamy Turkey Soup, this sandwich is the perfect lunch for the day after Thanksgiving. Trust me, it is absolutely delicious and couldn’t be easier to put together.
The perfect sandwich to use up some of those turkey leftovers from the holidays.
Ingredients
- 2 slices of bread
- 1 slice Colby Jack cheese
- Turkey, as much as you'd like
- 1 teaspoon butter
- Dijon Honey Mustard Sauce
- 1/3 cup mayonnaise
- 1 tablespoon Dijon mustard
- 1 tablespoon honey
- Place mayo, mustard and honey into a bowl and mix until well blended.
Directions
- Heat a pan over medium heat.
- Add butter to pan and allow to melt, swirling the butter around to coat the pan.
- Top 1 slice of bread with the cheese and turkey.
- Spread a couple of teaspoons of the dijon honey mustard sauce on the other slice of bread and place on the turkey, with sauce side facing down.
- Place sandwich into the buttered pan and cook for about 3-4 minutes, then flip to the other side.
- Cook for another 3 minutes or until the bread is golden brown.
- Slice in half and serve with extra dijon honey mustard sauce for dipping.
