I keep an old ice cream bucket in my freezer that I use to keep any leftover veggies in. It takes about a month for it to get full, then I make this delicious and satisfying soup. Even in the summer when it’s hot, I just use my crock pot to keep from heating the house up. With a slice of warm cornbread or saltine crackers, this makes a tasty and filling meal.
Ground Beef and Veggie Soup
1 lb. browned ground beef
Whatever veggies you have on hand. (I used potatoes, onions and carrots this time)
8 cups water
1-15 oz. can tomato sauce
6 beef or chicken bullion cubes
1 Tbs. sugar
1/2 tsp. garlic powder
1/2 tsp celery salt
Salt and Pepper to taste
1/4 cup cold water
2 tsp. corn starch
Bring carrots to a boil in a large pot and cook for 15 minutes.
Add rest of veggies, ground beef, tomato sauce, sugar, bullion, salt, pepper, celery salt and garlic powder. Bring back to a boil and cook for 15 minutes more over medium high heat.
Mix corn starch with cold water, then stir into soup.
Cook for 5 minutes more. Serve.

Haupi: I just started using arrowroot powder instead of cornstarch a few months ago. A personal decision after I read about how cornstarch might not be good for us. I love adding a little to gravies, sauces and soup to give it a thicker consistency. If a recipe calls for 1 Tbs. cornstarch, replace it with 2 tsp. arrowroot powder.
