I know there are easier ways to make buttermilk, such as the milk and vinegar method. But I love drinking buttermilk, and vinegar just doesn’t cut it. So I make my buttermilk this way. It can be used for drinking or in cooking.

Homemade Buttermilk

1 cup active cultured buttermilk
3 cups milk
very clean 1 quart container with secure lid

Add 1 cup of active fresh cultured buttermilk and 3 cups milk to a clean quart jar. Screw on the lid securely and shake to mix thoroughly. Let sit out in a warm part of the room for 24 hours. The finished buttermilk should be refrigerated, and will keep easily for several weeks. You can also freeze buttermilk for longer storage.

No Buttermilk On Hand? Here’s a quick and easy substitute you can use in cooking and baking:

To make 1/3 cup sour milk, place 3/4 teaspoon lemon juice or white vinegar in a glass measuring cup. Add enough regular milk to make 1/3 cup total liquid. Let mixture stand for 5 minutes. For 1/2 cup of sour milk, add 1 teaspoon of vinegar or lemon juice, and enough milk to equal 1/2 cup of liquid. Easy Peasy!

  1. My mother-in-law told me they used to make Homemade Buttermilk using a similar method to yours. They used powdered milk. She said it taste amazing. I'll have to try it someday. I just never remember to buy buttermilk to have the starter :)

  2. I've heard of people using powdered milk in homemade yogurt to make it thicker. Maybe it does the same for buttermilk? I love the homemade version, it has a much milder and creamier taste.

  4. I make my own sour milk like your recipe all the time. Since we don't drink buttermilk and only use it for baking this is a much easier thing to do.
