Homemade Caramel Sauce

I recently made a homemade caramel sauce to go with a Caramel Swirl Cheesecake I made. The resulting caramel was so tasty and so easy to make, that I just had to share the recipe with you. You’ll only need three simple ingredients for this easy-peasy caramel: honey, butter, heavy cream, and about 15 minutes of time. Is it really that easy? Yes it is.

You begin by adding the honey and butter to a sauce pan, cook and stir frequently over medium-high heat until it is boiling and has turned a golden caramel color, then remove from heat and stir in your cream, being careful of splatters. You are left with a rich and smooth caramel sauce, that is fabulous as a topping for ice cream after it’s cooled for about an hour, or drizzled over the top of a cake as a decoration. Once the sauce has had time to cool for several hours in the fridge, it thickens up even more, and makes the perfect dipping sauce for apples, stirred into hot apple cider for homemade caramel hot cider, or for making your own “Starbucks” style coffee drinks at home. You could even use it as a filling between cake layers. It taste divine eaten straight from a spoon too (not that I would know anything about that).

Cooking times vary widely with this recipe, depending on the size and thickness of your pot, stove, heat and batch size. Color is the key.

The caramel becomes thicker after it cools. It gets bonus points for being refined sugar free too!

Homemade Caramel Sauce

Ingredients

  • 1/2 cup salted butter
  • 1/2 cup honey
  • 1/2 cup heavy cream

Directions

  • n a heavy bottom saucepan, combine butter and honey.
  • Bring to a boil and cook, stirring frequently with a whisk, until it turns a dark caramel color.
  • Remove from burner and add cream, (be careful, it will splatter) and stir well to combine.
  • The caramel sauce will thicken as it stands.

Tip: When you’re using a sticky ingredient like honey or molasses, rub the inside of your measuring cup with a little bit of butter and the substance will slide right out of the cup!

I have fell in love with this stuff, and have plans to give it out as Christmas gifts this year. Hey, one can never start planning to early for the holidays.
