Lazy Granola
This granola is so easy to make and really yummy as a topping for yogurt, eaten as a cold cereal, or even just a snack. Make it your own by adding your choice of dried fruit, such as raisins or cherries if desired. My family gobbles this up, and a batch rarely last us more then a week.
Lazy Granola
1/2 cup brown sugar
1/2 cup oil (I use coconut oil)
1/2 cup honey
2 teaspoons cinnamon
2 teaspoons vanilla
6 1/2 cups old fashioned oats (make sure they are labeled gluten free)
1/2 cup sliced almonds or chopped pecans
Mix brown sugar, oil, and honey in a small saucepan. Bring to a low boil.
Remove from heat. Stir in cinnamon and vanilla.
Pour over oats and nuts in a large bowl. Stir until well coated.
Spread oats in a 9×13 pan. Bake at 375° for 10 minutes.
Take out and stir.
Return pan to oven. Turn oven off.
Go to bed. Wake up to a delicious, cinnamon-y scent wafting through your kitchen!
