Maple Mashed Sweet Potatoes
Sweet Potatoes are often served for holiday meals, but are a delicious side dish or main course anytime. Sweet Potato Pancakes, Sweet Potato Pie, or this delicious Maple Mashed Sweet Potatoes recipe I’m about to share with you are just a few of the ways you can serve this versatile vegetable. They have a great texture and will add a welcome splash of color to your Thanksgiving spread.
Don’t stop at just serving them during the holidays though! These power-house veggies are packed with 438% of your daily recommended allowance of Vitamin A, 37% of Vitamin C, as well as Iron, Fiber, Potassium (28% more potassium than a banana) Manganese, Vitamin B-6, Calcium and Zero Fat! They also have a very low glycemic index. This means that the carbohydrates in a sweet potato have a very low impact on blood sugar levels, and gives you a steady source of energy and less chance of body fat production.
These sweet potatoes are fantastic as a colorful holiday, or anytime side-dish!
Bring a large pot of salted water to a boil.
Add potatoes and cook until tender, about 20 - 25 minutes.
Drain potatoes and add to a large bowl with the butter.
Using a potato masher, mash the potatoes and butter together until they are blended.
Add maple syrup and blend until combined.
